Carrot & Ginger Soup

Ingredients

  • 500g carrots (chopped)
  • 1 small onion (chopped)
  • 1 tsp fresh ginger (grated)
  • 700ml vegetable stock
  • Salt & pepper
  • Optional: coconut milk

Preparation

  1. Simmer carrots, onion and ginger in stock until soft.
  2. Transfer to FlexPrep jug.
  3.  Blend until smooth and velvety.
  4. Season to taste and add coconut milk if using.
